Imperfect Vegan Newsletter #004
Hi there!
We hope this newsletter finds you well. So technology wasn’t my friend last week 😅. Sorry for the silence but we’re back with our regular programming! 🌱
In this week’s edition, we’re all about green choices and fulfilling travel dreams! Discover eco-friendly milk options, try a quick and tasty eggplant pita recipe, make homemade cashew milk, and elevate your travel goals with Shivya’s new course.
Let’s go!

Dairy or Plant Milk: What’s the Greener Option?
Choosing plant-based milks like oat, soy, cashew or almond is like giving our planet a big, warm hug. They consume fewer resources and are friendly to the environment. Plus, they’re gentle on our stomachs and often packed with good stuff. Every time you choose that carton of plant milk, you’re not only making a delicious choice but also one that helps our planet. Here’s a cool infographic by on Medium showing the environmental impacts of dairy vs non-dairy milks. While almond milk does use more water than other non-dairy milks, it’s still a greener choice than traditional dairy milk.

This week we’re sharing an easy roasted eggplant pita pocket with a flavorful tahini yogurt sauce, all wrapped in a warm pita. It’s a healthy and comforting meal that's great for a quick lunch or a takeaway meal.

Want to make your own plant milk at home? I recommend starting with this delicious cashew milk. It works really well in tea, coffee, smoothies or just on its own.
Cashew Milk Recipe:
Ingredients:
1 cup raw cashews (soaked for 4 hours or overnight)
4 cups water
Sweetener to taste (like 1 tbsp maple syrup, agave, or a date)
Method:
After soaking, rinse and drain the cashews.
Blend cashews with water and sweetener until smooth and creamy.
Store in the fridge in a sealed container for up to three days
